Healthy Tailgating #Recipes #MadeWithChobani

​It's fall and that means football and tailgating at my house.  Since we all indulge at tailgates,  my healthy contribution allows me to keep down the bulge. Here's my recipe for chicken wraps. 



Start with a container of Chobani Greek Yogurt


Add 3 cloves of garlic.  I like garlic and the number 3 you can add more or less to taste.

Add 1/8th of a teaspoon of coriander.  It adds an earthy lemony taste.  (optional)

 Meanwhile drain a sweet red pepper.  


While sweet red pepper drains, zest a lemon.  

Add the zest (about 1 teaspoon).to the Chobani Greek Yogurt.



Add the juice of 1/2 the lemon.



Add salt and pepper to taste.  I used 1/4 teaspoon of each

​.


Mince (chop very little) the sweet red pepper.  See picture for idea of size.



For color I added 5 leaves of cilantro.  You can substitute parsley if you don't like cilantro.


See how pretty it looks.  You eat with your eyes first.....



Cut your chicken for the Kabobs.


Place in bag and let it marinate from 1 hour to overnight if you're tailgating the next day.



If you are using wood skewers, don't forget to soak in water so that they don't burn on the grill.



I used metal skewers.



In the morning of the tailgate.  I skewer the Chobani Greek Yogurt marinated kabobs and put them in a foil pan covered with aluminum foil.  I transport to the tailgate in my cooler.



When I get there, all I have to do is place them on grill.  No prep time, means more time to enjoy with friends.


Once done, I place the kabob(s) in a pita, add some tomatoes and additional dressing made with Chobani Greek Yogurt, Garlic, Lemon Zest and Cilantro.



Roll the pita. (tuck in one end)



Now, you can walk around and enjoy the Chobani Greek Yogurt Chicken Kabob.



Marinade:  
5.3 oz. Chobani Greek Yogurt
1 jarred roasted sweet red pepper
zest of 1 lemon (1/2 for marinade) (1/2 for dressing)
juice of 1/2 a lemon
1/8 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon pepper
5 cilantro leaves (minced)

Dressing:
5.3 oz. Chobani Greek Yogurt
lemon zest (the 1/2 reserved from marinade prep)
3 cilantro leaves finely chopped
